Surf and Turf Puff Pastry Medley

Ingredients

For the Filling:

300g beef tenderloin, thinly sliced
200g large shrimp, peeled and deveined
150g scallops, patted dry
1 tablespoon olive oil
2 cloves garlic, minced
1 teaspoon smoked paprika
1 teaspoon dried thyme
Salt and black pepper to taste
1/4 cup white wine
1/2 cup heavy cream
1 tablespoon Dijon mustard
1 tablespoon fresh parsley, chopped

For the Honey Mayo Drizzle:

1/4 cup mayonnaise
2 tablespoons honey

For the Puff Pastry:

1 sheet puff pastry dough, thawed
Flour for dusting
For the Egg Wash:

1 egg, beaten
1 tablespoon water

Instructions

Preheat your oven to 400°F (204°C).

In a large skillet, heat olive oil over medium-high heat. Add the sliced beef and sear until browned on both sides. Remove the beef from the pan and set it aside.

In the same skillet, add a bit more olive oil if needed. Sauté the minced garlic until fragrant.

Add the shrimp and scallops to the skillet, cooking for 2-3 minutes until they start to turn opaque.

Season the seafood with smoked paprika, dried thyme, salt, and black pepper. Pour in the white wine and let it simmer for a minute.

Reduce the heat to medium, add the heavy cream, and stir in the Dijon mustard. Allow the sauce to thicken for 2-3 minutes.

In a small bowl, whisk together mayonnaise and honey to create the Honey Mayo Drizzle. Set aside.

Add the seared beef back to the skillet, combining it with the seafood and sauce. Stir in fresh parsley and let it simmer for an additional 2 minutes. Remove from heat.

Roll out the puff pastry sheet on a lightly floured surface. Cut it into squares or rectangles, depending on your preference and the size of your serving dishes.

Place a generous spoonful of the Surf and Turf mixture onto one half of each puff pastry piece, leaving space around the edges.

Drizzle a little Honey Mayo over the filling.

Fold the pastry over the filling or make it a circle shaped or make it roll shaped. Seal the edges by pressing them together with a fork.

Place the filled puff pastries on a baking sheet lined with parchment paper.

In a small bowl, whisk together the egg and water to create the egg wash. Brush the tops of the puff pastries with the egg wash for a golden finish.

Bake in the preheated oven for 15-20 minutes or until the puff pastry is golden brown and puffed up.

Serve the Surf and Turf Puff Pastry Medley hot, drizzled with additional Honey Mayo or Honey only and garnished with fresh microherbs or edible flowers if desired.

History and Background:

The origins of the surf and turf concept date back to ancient times when coastal communities embraced the bounties of the sea while inland regions celebrated the spoils of hunting. The combination of land and sea on a single plate has since evolved into a culinary tradition celebrated worldwide.

The inspiration for our Surf and Turf Puff Pastry Medley draws from the Michelin-starred restaurants that have redefined fine dining. Over time, the Michelin Guide became synonymous with culinary excellence, with stars signifying exceptional quality. Our dish pays homage to this esteemed tradition, bringing the Michelin-star experience to your home.

Home Cooking Advice:

Creating a Michelin-inspired dish at home may seem daunting, but with the right approach, you can achieve restaurant-quality results. Here’s some valuable advice to guide you through the process:

Quality Ingredients: Begin with the freshest and highest-quality ingredients. Select prime cuts of beef, fresh seafood, and top-notch puff pastry dough. The quality of your ingredients lays the foundation for an exceptional dish.

Preparation Is Key: Mise en place, a French term meaning “everything in its place,” is a fundamental principle. Chop, measure, and organize all ingredients before you start cooking. This ensures a smooth and stress-free cooking experience.

Perfecting the Sauce: The sauce is the soul of this dish. Achieve a balanced and flavorful sauce by allowing it to simmer and meld the flavors. Be patient, and taste along the way to adjust seasoning as needed.

Puff Pastry Mastery: Puff pastry can be tricky, but with a few key steps, you can achieve a golden, flaky crust. Thaw the pastry properly, work quickly to prevent it from getting too warm, and use a hot oven for the perfect rise.

Home Cooking Michelin Style:

Replicating the Michelin-star experience at home involves attention to detail and a commitment to excellence. Here’s how you can infuse a touch of Michelin magic into your Surf and Turf Puff Pastry Medley:

Plating Aesthetics: Michelin-starred dishes often feature impeccable plating. Take inspiration and present your Surf and Turf Puff Pastry Medley with an artistic touch. Elevate the visual appeal by garnishing with fresh herbs and arranging the components thoughtfully on the plate.

Flavor Layering: Michelin-starred chefs are masters at layering flavors. Apply this technique by ensuring each element of your dish contributes a unique taste. The beef, seafood, and sauce should complement and enhance each other, creating a symphony of flavors.

Attention to Detail: Michelin-starred restaurants are known for their meticulous attention to detail. Follow suit by paying attention to the smallest aspects of your dish, from the precise doneness of the beef to the careful drizzle of the Honey Mayo. These details elevate the overall dining experience.

Tips and Tricks for Cooking:

As you embark on this culinary adventure, consider the following tips and tricks to ensure success:

Searing Perfection: Achieve a perfect sear on the beef by patting it dry before cooking. A dry surface promotes caramelization, enhancing the flavor and texture of the meat.

Seafood Sensibility: Avoid overcooking the seafood to maintain its delicate texture. Shrimp and scallops cook quickly, so be attentive to prevent them from becoming rubbery.

Creamy Consistency: When preparing the sauce, slowly incorporate the cream to prevent curdling. A gradual addition ensures a velvety and luscious consistency.

Puff Pastry Prowess: For a show-stopping puff pastry, preheat the oven adequately. The high heat is crucial for achieving that sought-after golden brown color and flaky layers.
