2 veal shanks (Osso Buco)
1/2 cup soy sauce
1/4 cup white vinegar
4 cloves garlic, minced
1 teaspoon black peppercorns
2 bay leaves
1 cup diced tomatoes
1/2 cup sliced carrots
1/2 cup chopped onions
1/4 cup sliced celery
1/2 cup white wine
1 cup beef broth
2 tablespoons tomato paste
2 tablespoons olive oil
Salt and pepper to taste

Instructions

Marinate Osso Buco
In a bowl, combine soy sauce, white vinegar, minced garlic, and black peppercorns. Marinate veal shanks in this mixture for at least 30 minutes.

Brown Veal Shanks
Heat olive oil in a large pot. Remove veal shanks from the marinade, pat them dry, and brown on all sides. Set aside.

In the same pot, sauté onions, carrots, and celery until softened. Add diced tomatoes, tomato paste, and bay leaves. Pour in the white wine and let it simmer for a few minutes.

Combine Osso Buco and Adobo Sauce
Return the browned veal shanks to the pot. Pour in beef broth, ensuring the shanks are partially submerged. Season with salt and pepper to taste. Bring to a simmer, cover, and let it cook on low heat for about 2 hours or until the veal is tender.

Once the Osso Buco is tender, remove the bay leaves and discard them. Adjust seasoning if needed. Simmer uncovered for an additional 10 minutes to thicken the sauce.
