Panko-Crusted Lamb Racks with Mint Gel Spheres and Red Wine Pearls

Ingredients

For the Panko-Crusted Lamb Racks:
2 lamb racks, trimmed
Salt and pepper to taste
2 tablespoons Dijon mustard
2 tablespoons olive oil
1 cup Panko breadcrumbs

For the Mint Gel Spheres:
1 cup fresh mint leaves
1 cup water
1/2 cup sugar
1/2 teaspoon xanthan gum
For the Red Wine Pearls:
1/2 cup red wine reduction
1/2 teaspoon sodium alginate

Instructions

Panko-Crusted Lamb Racks:
Preheat your sous-vide machine to your desired doneness temperature for lamb (e.g., 135°F for medium-rare).

Season the lamb racks with salt and pepper.

In a small bowl, mix Dijon mustard and olive oil to create a smooth paste.

Brush the lamb racks with the mustard-oil mixture, ensuring an even coating.

Roll the lamb racks in Panko breadcrumbs, pressing gently to adhere the crumbs to the meat.

Place the lamb racks in a vacuum-sealed bag and sous-vide cook them for 4-6 hours, depending on your desired doneness.

Once sous-vide cooking is complete, carefully remove the lamb racks and pat them dry.

Torch the lamb racks lightly to create a golden, crispy crust while maintaining the sous-vide perfection inside.

Mint Gel Spheres:
In a blender, combine fresh mint leaves, water, sugar, and xanthan gum. Blend until smooth.

Strain the mint mixture to remove any solids.

Using a syringe or dropper, carefully drop small portions of the mint liquid into a bath of calcium lactate solution. Allow them to set as gel spheres.

Red Wine Pearls:
Prepare a red wine reduction by simmering red wine until it reduces by half.

Let the reduction cool slightly, then mix in sodium alginate until well combined.

Using a dropper or spoon, drop small portions of the red wine mixture into a bath of calcium chloride solution, forming delicate red wine pearls.

Plating:
Slice the sous-vide, Panko-crusted lamb racks into elegant portions.

Arrange the lamb slices on the plate, creating a visually appealing composition.

Garnish with mint gel spheres and red wine pearls for bursts of flavor and texture.
