1 lb pork belly, skin-on
1 cup polenta
50 g butter
200 ml milk
3 cups water
1/4 cup truffle oil
Salt and pepper to taste
1 lb Brussels sprouts, halved
2 tablespoons olive oil
1 tablespoon balsamic glaze
Microherbs for garnish


Preheat oven to 375°F (190°C).

Score the pork belly skin and rub generously with salt. Steam in the oven or Boil in the pot with Mirepoix the Pork Belly.
Roast in the oven for 50 minutes or 1 hour with preheated oven(375°F) or until the skin is crispy and the meat is tender.
